Favorite Recipes

Three lovely ladies threw me a bridal shower this past Saturday. One of my favorite gifts was from one of the indomitable’s former classmates. It was a cookbook and hand written note cars of her favorite recipes. I think one of the best things people can give is their favorite recipes so I thought I’d share some of mine, and I would like you, internet, to post one of your favorite recipes in the commets section.

Curry Tuna Salad

2 (6 ounce) cans tuna, drained
1 cup chopped dates
1 1/2 cups chopped celery
1 large apple - peeled, cored and diced
1/2 cup lemon fat free yogurt
1 tablespoon minced onion
2 teaspoons lemon juice
1 teaspoon ground curry powder

1. In a large bowl, mix the tuna, dates, celery and apple.
2. In a separate bowl, whisk together the yogurt, onion, lemon juice, and curry powder. Pour over tuna mixture and gently toss to coat. Refrigerate 1 hour, or until chilled.

    Oriental Cabbage Salad

    1 large cabbage - shredded
    3 green onions - chopped
1 package ramen noodles, oriental flavor
    .5 cup oil
    1 tablespoon sugar
    1 teaspoon salt
    1 teaspoon accent (msg)
    .5 teaspoon pepper
    3 tablespoon vinegar
1 flavor package from ramen noodles
sesame seeds, sunflower seeds or toasted almonds (my fave is the almonds)

Shred cabbage, chop onions, crush noodles and mix in large bowl with seeds/nuts. For the dressing: mix oil, sugar, salt, flavor package, accent, pepper and vinegar in separate jar or bowl.

Before serving pour dressing over cabbage and mix.
